I guess they decided it was tendonitis because of where the pain was. It seemed to radiate from the back of my hand, between the thumb and index finger, and was very painful when I moved my thumb or bent my wrist. It's been a long time since I have had the problem so I don't remember anything other than that.
I know how frustrating it can be with your employer when you have problems like this. When I developed carpal tunnel, it was at first assumed that I had tendonitis. Well, in those days (early 80's) there really weren't any difinitive tests for tendonitis so I guess people used to fake it to get disability. My supervisor was told to transfer me to one of the most boring, crappy jobs in hte company because "we don't want an epidemic of tendonitis". Once they understood that I didn't have tendonitis but carpal tunnel (and had surgery) then I guess they believed that I wasn't "faking" it.
The fact that your wrists lock up makes me wonder if there is something other than tendonitis going on. I know that ganglion cysts can cause all kinds of trouble since the "tail" can grow into all kind of places. Also, if a ganglion is surgically removed, and they don't get it all, it can grow back. I had a friend who had to have their hand and part of their arm opened up to get the whole cyst removed.
